  • 2 1/2 cups of whole wheat flour
  • 1/2 cup of canned pumpkin
  • 2 eggs

  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • water (depending on the water content in the pumpkin you may need to add a tablespoon)

Preheat oven to 350 degrees

In a bowl, mix together flour, eggs, pumpkin, peanut butter, salt and cinnamon.   You can mix the dough with a handheld beater.   Consider mixing by hand as it works really well.

Why the extra water?  The water content of canned foods can change slightly year to year, as the growing season will change seasonally.  For this reason, adding a little water may be required. Tips For Rolling Cookie Dough
